North County’s Culinary Rise: San Diego’s New Dining Destinations
We are experiencing North County becoming the culinary center of San Diego. Have you noticed this too?
We are only a few weeks into 2026, and the restaurant scene is already moving fast. If you’re looking for a spot to book this weekend (or waiting for the ones worth the hype), here is what you need to know:
NOW OPEN: Nómada (Carlsbad)
The Vibe: Regional Mexican with a serious design pedigree.
The Scoop: This just opened in the La Costa area (Chef Alex Carballo’s new spot). It’s stunning—think "Tulum meets Southern California." It is currently the toughest reservation to get in North County, but the bar area is perfect for a spontaneous drop-in.
THE STATUS UPDATE: Honor Bar (Del Mar)
The Vibe: The famous Hillstone excellence (think: the best fried chicken sandwich you’ve ever had!).
The Scoop: The construction crews at the former Bully’s North site are finally making visible progress. While we don't have an exact date, insiders are eyeing a "first half of 2026" opening. This will be the lunch spot of the summer once it opens.
THE ACCOLADE: Lilo (Carlsbad)
The Vibe: Minimalist, wood-fired, and incredibly precise.
The Scoop: Chef Eric Bost (of Jeune et Jolie fame) continues to rack up wins. Lilo was just named a James Beard semifinalist this week. If you haven't been since they opened last year, now is the time to revisit.
